Beef Bone Soup

My whole family was sick today – down with viral fever and coughing fit. I made soup and porridge for them and on this post, would like to share my Beef Bone Soup recipe (for 4 people). Enjoy!

Ingredient A
500g of beef bones (tenderloin part preferably), washed and cut into cubes (you can ask the butcher to cut for you)
6 cups of water
4 pieces of cardamon
2 pieces of star anise
1 cinnamon stick
5 pieces of clover
3 petals of lime leaves
1 stalk of lemongrass (crushed)
thumb-sized siamese galangal/lengkuas (crushed)
(Boil all the above in a pot within 2 1/2 hours with small flame)

Ingredient B
(prepared and done while the above is boiling)

8 cloves of onions (some sliced and some fried as garnishing)
2 cloves of garlic (crushed)
thumb-sized ginger (crushed)

Saute the above in hot oil (about 1 table spoon) in a separate wok until brown and fragrant. When done, add into the boiling soup (with Ingredient A). Add in salt, pepper, ajinomoto and a cube of Maggi stock- Beef Ribs (Rusuk) flavour and adjust accordingly into the boiling pot after Ingredient B has set in. You can also add potatoes and carrots (sweet peas also can) towards the end. Garnish with fried onions and chopped leaves to add fragrance. Serve while hot.
